DIY of the Week goes to Hubby!

Miss Wiggle's Daddy made her Birthday cake, so I figured we would share the recipe because boy was this family recipe a big hit!

Miss Wiggle's Daddy made her Birthday cake, so I figured we would share the recipe because boy was this family recipe a big hit!
3 cups all purpose flour
2 tsp. baking powder
1 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
3 cups grated carrots
1 tsp vanilla flavoring
2 cups sugar
1 1/4 cup vegetable oil
3 eggs
for frosting
1 cup of chopped pecans
Cream cheese frosting
1. Lay your cream cheese and margarine out to soften for the icing.
2. Sift together the flour, baking powder, baking soda, cinnamon and salt in a bowl.
3. Add the carrots, sugar, oil and eggs in your mixing bowl, then add your dry ingredients a little at a time so lour won't fly everywhere till all is mixed together. mix well then add vanilla flavoring and mix well.
4. spray 3 round 8 or 9 inch baking pans with Pam for baking no stick cooking spray with flour works good. Pour your batter into each pan evenly.
5. Bake in 325 even for 30 minutes. Take out and cool down for about 15 or 20 minutes. Then take out of pans and cool on wire rack until cooled down. Put one layer face down on plate and add icing, then next layer face down on top of that and add icing on that and then repeat with third layer. frost each layer on sides as you go.
Icing
mix pecans into icing before adding to cake.
